When you run a rich fuel mixture, how come some cars backfire it out the exhaust and other's like V8 supercars have good-looking flames coming out the exhaust?

when you get off the throttle, there's still too much fuel going into the combustion chambers so it doesn't all burn. The unburnt fuel goes into the (very hot) exhaust, and ignites. If you have enough in the exhaust system it'll make flames come out the end. Generally you need a straight through system to see anything.

Yeah I know what causes it but what differenciates from backfiring and blowing flames out the exhaust?

If you backfire big enough the flames will make it all the way out the end of the exhaust...
Try running a pipe straight from the manifold out the side like a V8 supercar, and you'll get flames too - I know, I've tried it :>
You can get backfires from excessive leaning out too, but they don't usually happen far enough back in the exhaust to make visible flames, and it doesn't do it on overrun.
